Dijkstra was a prominent member of the Groningen Ploeg and one of its most famous painters. His first commission as a professional artist was to create geographical school posters. He lived in Amsterdam at the time but returned to Groningen in the early 1920s where he became a member of the Ploeg. He frequently and extensively depicted the Groningen countryside, alongside cityscapes and portraits.
In later years, after the heyday of the Ploeg, he made stained glass windows and murals, among other things.
